Tomato and olive tart decorated with basil leaves

This colourful summer tart is the perfect addition to any BBQ or picnic. Quick and simple to make, it also provides a brilliant opportunity to get the children involved in the kitchen, scattering spinach, layering tomatoes and dotting the olives on top!

Ingredients:

One block of puff pastry
Sliced fresh tomatoes
A handful of chopped spinach
100g pitted olives
1 beaten egg
Olive or herb oil
A handful of fresh basil
Goats cheese or feta (optional)

Method:

Turn on the oven and heat to 180° C.

Roll out the pastry to approximately 1cm thick and cut with a knife into a rectangle.

With the excess pastry, cut out two long and two short strips to create a 'frame' to place on top of the four edges of the pastry rectangle.

Brush with the beaten egg.

Scatter the spinach over the base of the rectangle, avoiding the 'frame', and then layer tomatoes and dot olives evenly on top.

Bake in a hot oven for 15-20 minutes.

Once baked, drizzle with olive or herb oil and decorate with fresh basil.

Why not also try crumbling goat's cheese or feta over the slice once cooked?
